Head Chef from the Celtic Ross Hotel in Cork, Alex Petit, joined us in the kitchen to whip up a traditional French dessert of Apple Clafoutis.
Info about the recipe
Its a French pudding made of fruit and a flan batter. Served warm, it can garnished with Chantilly cream or vanilla ice cream
Classic French dish where every family have their own recipe. The fruits used in this recipe can be changed according to the season: cherries, pears, berries, plums….
It is one of the easiest French dessert recipes and can be made a day in advance.
Ingredients
4 apples
4 eggs
160g sugar 5oz
180g flour 6oz
300ml milk 1/2pint
60g butter 2oz
1 vanilla pod
2 drops almond essence
1 pinch salt
1 lemon zest
1 drop brandy
Method
Peel and core the apples and cut into large chunks
Sprinkle a little sugar and a drop of brandy over the apples
Over medium heat, caramelise the apples with a little butter
In the meantime:
Mix the flour, sugar, salt, lemon zest and vanilla pod
Add the eggs and the almond essence
While whisking, add the milk gradually
Finish with the melted butter.
Arrange the caramelised apple onto a buttered dish
Pour over the batter and cook in a preheated oven at 170 or gas mark 3 for 30 minutes
Dust over with icing sugar as soon as it comes out of the oven.
