Makes approx 15 muffin/cupcake size muffins.
Ingredients:
- 280g plain flour
- 2 tsp baking powder
- 1/2 tsp bread soda
- 1/4 tsp salt
- 100g caster sugar
- 50g oats
- 1 egg
- 250ml buttermilk
- 75ml oil
- Vanilla extract
- 2 small bananas
- Chocolate chips
Method:
- In a large bowl mix together your dry ingredients: flour, sugar, oats, bread soda, baking powder and salt.
- In a spectate bowl mix together your wet ingredients: buttermilk, egg, oil and vanilla extract.
- Simply add your wet ingredients to your dry and combine together. Just mix until you can't see anymore flour, don't over mix.
- (At this stage you have made your basic muffin mix which can be kept in a fridge for 3 days.)
- With a fork mash your bananas and add to your muffin batter.
- Sprinkle in some chocolate chips.
- Scoop your batter into a lined cupcake tin.
- Sprinkle some extra oats on top.
- Bake in a preheated oven of 175 degrees for 18 minutes.
The best thing about these muffins is the batter can be kept in a fridge for a few days so busy families can make up the batter in advance and bake them fresh each morning.
