Clodagh's Spanish Baked Eggs

Enjoy authentic Spanish flavours from the comfort of your home with our Spanish Baked Eggs. 

Serves one: 

Grease one small ovenproof dish with butter, season with salt and pepper. Crack two eggs into the dish. Add your topping of any of the following and bake in a pre-heated oven at 200degrees/Gas6 for 10 minutes. 

FRENCH BAKED EGG

Place 25g gruyere cheese, ½ tsp of Dijon mustard and two tbsps cream in a bowl. Mix well and then pour over the eggs.

SPANISH BAKED EGG

Take 5 thin slices of chorizo and place the on top of the eggs, followed by ½ tsp finely chopped flat parsley, one crushed clove of garlic and lastly two tbsps of tomato passata.

ITALIAN BAKED EGG

Place 25g parmesan cheese, 20g pancetta, one halved cherry, one torn fresh basil leaf and one tbsp tomato passata in a bowl. Mix well and then pour over the eggs.

IRISH BAKED EGG

Slice ½ breakfast sausage and place on top of the eggs, followed by ½ black pudding crumbled and ½ slice diced of streaky bacon. Lastly pour two tbsps cream on top.

SMOKED SALMON BAKED EGG

Dice one slice of smoked salmon, and place in a bowl, followed by ½ tsp finely chopped chives and lastly two tbsps of cream. Mix well and then pour over the eggs.
