(serves 4)
ingredients:
1 tub mascarpone 250g
1 shot of espresso coffee cold
1 tsp vanilla extract
15ml brandy
15 ml rum
150g of whipping cream
2 heaped tablespoons of icing sugar
1 packet of lady fingers biscuits
200ml of strong cold coffee
15ml brandy
15 ml rum
Martini glasses to serve
Cocoa powder and chocolate shavings to garnish
method:
1. Place the mascarpone into a bowl and allow to soften slightly.
2. Meanwhile using a second bowl, lightly whip the cream and icing sugar to very soft peaks. Do not over whip the cream.
3. Add the vanilla extract and brandy to the mascarpone and mix until fully combined.
4. Now add the rum and mix again. Slowly add the coffee mixing all the time.
5. Fold the whipped cream into the mascarpone until silky smooth.
6. Combine the cold coffee with the remaining brandy and rum. Dip each ladyfinger into the coffee mixture turning on both sides.
7. To assemble the individual tiramisu's place 2 to 3 soaked lady fingers into a martini glass. Half fill the glass with the mascarpone mix.
8. Top with chocolate shavings before filling the rest of the glass. Place the tiramisu into the fridge for at least 20 minutes to set. This can also be made the night before.
9. Just before serving top each glass with chocolate shavings and a dusting a cocoa powder
