Build your own Ice-Cream Sundae

Ingredients for hot fudge sauce:
100g cocoa powder
300g sugar
240g cream
100g butter
Pinch of sea salt
2 tsp vanilla extract

Ingredients for warm strawberry compote:

200g of Irish strawberries
2 tablespoons of sugar
Juice of half a lemon
2 sprigs of fresh mint
Few drops of balsamic vinegar (optional)

Ingredients for caramelised banana sauce:
150ml whipping cream
50 ml water
150g caster sugar
40g unsalted butter
1 medium banana, sliced

Recipe for hot fudge sauce:
-In a medium size saucepan, combine sugar, cocoa and cream, stirring with a whisk until completely combined and smooth.
-Place the saucepan onto a medium heat and stir the mixture until it comes to just below the boil.
-Stir in butter and continue to simmer the fudge sauce until the sauce thickens, about 3 to 4 minutes.
-Remove from heat, stir in vanilla and salt. Let cool for 5 minutes before serving over ice cream.
- Store in container in the refrigerator. To reheat, microwave for 30 seconds at a time until warm

Recipe for warm strawberry compote:
-Cut the strawberries in half or in quarters if large, and put in a pan with the sugar, mint and lemon juice.
- Heat gently until the sugar dissolves, then bring to a simmer.
- Cook the strawberries for 2 to 3 mins or until dark red and syrupy.
-Off the heat add the balsamic vinegar, if using. The compote can be stored in the fridge for up to 2 weeks. Can be served warm or cold.

Recipe for caramelised banana sauce:
-Pour the cream into a saucepan and warm gently.
-Place the sugar and water into a seperate saucepan on a medium heat and stir until the sugar has dissolved.
-Once the sugar has dissolved do not stir the sugar and cook to a light golden caramel colour. 
-Off the heat pour in the warm cream and stir, careful as the mix may bubble up.
- Return the saucepan to the heat and add the bananas and continue to cook for 1 to 2 minutes.
- Remove from the heat, cool slightly and stir in the butter.
-Allow the caramel to cool slightly before serving over icecream.

Building the ice-cream sundae:
-Grab a suitable glass, pick your favourite sauce, add a little to the bottom of the glass. -Top with a scoop of vanilla ice cream. Add more sauce. Now you can go crazy add some garnishes to take your ice cream sundae to the next level.

Suitable garnishes for an ice cream sundae:
-Honey comb
-Choc biscuit cake
-Cookies
-Fresh strawberries
-Fresh Cherries
-Whipped cream
-Marshmallows
-Crushed malteasers
-Hazelnuts and pecans

The possibilities are endless. Let the child inside you run wild.
