INGREDIENTS:
400 g beef strips ideally fillet or sirloin
300 g cream cheese
1 x Washed wild garlic finely chopped fine
1 x pack fresh chervil finely chopped
2 x store bought flatbreads
1 x bunch spring onion finely chopped
250 g wild mix mushrooms
200 g rocket salad
Salt and pepper
METHOD:
1). In a small blender add the cream cheese, wild garlic, chervil, and spring onions and blend for 1 minute
2). Add a pinch of salt and pepper to taste
3). Prepare the mushrooms and slice finely.
4). In a large frying pan that’s very hot add a splash of vegetable oil and add the mushrooms, cook for 1 minute and season with a pinch of salt and pepper.
5). Warm the flatbread on a dry pan.
6). In another large frying pan that’s very hot add 2tbsp of vegetable oil and add the finely shredded beef and cook for 1 minute and toss to cook the other side, this should only take 2 minutes as the meat is shredded .
7). Season with sea salt and pepper
8). Lay a warm flat bread on a plate and spread generously with the wild garlic cream cheese, next lay the mushrooms and finally the shredded beef, top with the wild rocket
9). To finish zest with your favourite hard Irish cheese, velvet cloud, Kylemore farmhouse or Galway goats hard are all our favourites!!
