Spicy Vegetarian Tortilla Wraps

It\'s National Vegetarian Week, so Edward Hayden joins us with a tasty recipe for spicy vegetarian tortilla wraps. 

Ingredients

  • 6 tortilla wraps

  • 1 ½ mixed peppers (1/2 red, green, yellow)

  • 1 red onion

  • ½ red chilli

  • 3 cloves garlic

  • 4-5 sliced mushrooms

  • ½ courgette

  • Pinch cayenne pepper

  • 1 tin chopped tomatoes

  • 7oz/200g grated mozzarella cheese (or mixed cheese)

Method

  1. Begin by dicing the garlic and red chilli. Also thinly slice all of the vegetables into thin strips. Heat a large frying pan and gently fry off the diced garlic, onion, mixed peppers, courgette and mushrooms with the diced chilli.

  2. Cook these until they are soft but not too coloured. Season with a little salt and pepper.

  3. Next add in the chopped tomatoes and cayenne pepper and allow this to simmer for 4-6 minutes.

  4. Tranfer to a clean bowl and allow to cool down.

  5. Lay the tortilla wraps out flat on the chopping board. Pile a portion of the tomato & vegetable mixture unto the wrap, sprinkle with grated mozzarella and roll up tightly.

  6. Preheat the oven to 180C/350F/Gas Mark 4

  7. Place these in the oven with a little cheese grated on top and serve instantly

  8. Variations: You can use most types of vegetables in this product

  9. Leftover cooked meats can also be added for a non vegetarian option.

  10. Feel free to cook them on the barbecue in a tin foil parcel if you prefer.
