Ingredients
1 Cooked chicken breast
60g Cup cooked quinoa
1 Mango chopped
Half a red pepper chopped
Half a red onion, peeled and chopped
Handful of mixed leaves
Handful of fresh mint, chopped
Squeeze of half fresh lemon
15g Chopped cashew nuts
Method
Bowl Quiona in water for 10 min or until all water has been avsorbed and quiona has puffed.
Pan fry chicken brest in 5g coconut oil until cooked through.
Combine all of the ingredients in a bowl (except chicken) and squeeze the juice from a fresh lemon over the ingredients. Slice up the chicken and mix through.
Sprikle with chopped cashew nuts.
