Thai pork curry

Supercook Leylie Hayes from Avoca shows us how to make a Thai pork curry.

Ingredients

  • 2lb diced lean pork (leg is idea Tablespoon olive oil Dessertspoon of turmeric Teaspoon Thai red curry paste (more if you like it hot) 2 pieces of lemongrass 8 kaffir lime leaves 2 large cloves garlic, crushed Small lump of ginger grated finely 3 tins coconut milk Teaspoon brown sugar Splash fish sauce Generous handful of chopped coriander Optional additions: baby corn or French beans

Method

  1. Toss the pork in the turmeric and a little salt and pepper. Fry in a little olive oil until golden then transfer to a saucepan. Add the garlic, ginger, red curry paste and lime leaves and mix well to coat. Cover the meat with the coconut milk and add the lemongrass stalks. Simmer gently for about 4555 minutes until meat is tender and sauce has reduced slightly. To finish add brown sugar, splash of fish sauce and freshly chopped coriander. Delicious served with basmati or jasmine rice, some warm nam bread and a little Avoca chutney.
