Healthy Pecan Pie Squares

Sophie Morris was in the kitchen tonight to show us how to make healthy pecan slices - delicious!


  • 300g pitted dates

  • 50g ground almonds

  • 320g pecan nuts

  • 70g desiccated coconut

  • 5 tbsp coconut oil

  • Pinch of sea salt

  • 1 tsp ground cinnamon

  • 60ml milk

  • 3 tbsp honey


  1. Roughly chop 150g of the dates and place in a bowl. Pour 50ml boiling water over the dates and leave to soak for 10 minutes.

  2. Meanwhile make the pecan pie base. Blitz 100g of the pecan nuts with the almonds, desiccated coconut, salt, 1 tbsp coconut oil, and the remaining 150g dates (non-soaked) in a food processor until well combined.

  3. Grease and line a 20cm baking tin and pour the pecan pie base into it. Spread it evenly in the tin to create a thick base. Place in the fridge while you make the topping.

  4. Pour the soaked dates into the food processor along with their soaking liquid, 180g pecan nuts, 4 tbsp coconut oil, cinnamon, milk & honey. Blitz together well until smooth.

  5. Pour this topping evenly over the base and then decorate with the remaining 40g pecan nuts (roughly chopped) on top.

  6. Place in the freezer for about an hour to harden, and then cut into squares! You can then store them in the fridge.
