If you fancy putting a fresh twist on your meat, take a look at Joe\'s delicious BBQ style pork chops, served with chilli corn.
1 chopped onion
4oz of tomato ketchup
1 glass of Jim Bean
2 tbsp. of Malt Vinegar
2 tbls. of treacle
2 tbls. of brown sugar
Splash of Worchester sauce
1tbls of yellow mustard
1tsp of cayenne pepper
4 pork chops
Salt and pepper
4 corn on the cobs
200g of butter
1 lime juice and rind
1 red chilli pepper de-seeded and chopped
1 bunch of fresh coriander chopped
Leave the chops to one side and mix together in a bowl the remaining ingredients.
Place chops into the marinade and sit in for 20 mins to 24 hours (in refrigerated covered in Clingfilm).
Place onto bbq or griddle pan and cook either side for 8-10 mins or until chop fully cooked through (75c core temperature).
Mix together the butter, lime, chilli, coriander and season with salt and pepper.
Rub mixture over the corns and cover with foil.
Cook on bbq or griddle pan at low heat for about 20 minutes remembering to turn regularly.
They can also be cooked in an oven of 170c for 20 minutes.
Serve with some nice salads and crispy breads.
