Gluten and Lactose-Free Panna Cotta

Joe\'s Sugar, Gluten and Lactose-Free Panna Cotta with sauté pineapple and fresh coriander and pomegranate seeds. 

Ingredients

  • Serves 4

  • 400 ml Coconut Milk

  • 2tbls Agar Agar

  • 1 Vanilla Pod

  • 200g of Fresh Diced Pineapple

  • 100g of sweetener (like candarell)

  • Seeds of ½ a pomegranate

  • 1tbls of fresh coriander chopped

Method

  1. Simply in a pot place milk and agar agar, and let dissolve

  2. Add the seeds of the vanilla pod and the pod itself

  3. Add heat and slowly bring to the boil, reduce heat and let simmer for 2 minutes

  4. Strain into a jug and pour into 4 100 ml moulds, leave for 2-3 hours in fridge to set

  5. Meanwhile, heat a pan until hot, add the chopped pineapple and sweetener and let caramelise

  6. Add the pomegranate and coriander, place onto 4 plates nice and decoratively

  7. De-mould the Panna Cottas and place on the plates, enjoy
