Spicy Spatchcock Chicken

A spicy BBQ chicken recipe


  • 1 Chicken (around 1½kg)

  • 4 red chilies chopped

  • 3 cloves garlic peeled & crushed

  • 2 teaspoons sweet paprika

  • 2 teaspoons vinegar

  • 2 teaspoons chopped parsley

  • A few drops of tabasco

  • 1 lemon (zest & juice)

  • 2 tablespoons of olive oil

  • Sprigs of thyme & rosemary.


  1. Flip chicken onto its belly. With a sharp kitchen scissors, cut along back bone on both sides. Turn over and flatten out the chicken, then score the legs.

  2. Mix all ingredients together and place on a dish with the chicken. Season with sea salt and pepper. Leave covered in fridge for a couple of hours. Before cooking, hang chicken at room temperature.Remove from dish and place on barbeque.

  3. During cooking baste the chicken with the remaining marinade. Make sure the chicken in cooked thoroughly. Cooking time varies between 30-45mins. 

  4. Tips: Add Worchester sauce for extra flavour - Instead of sweet paprika use smoked paprika - Add some turmeric for added effect
