There’s nothing better than a heart-warming bowl of Homemade Chicken Soup. This delicious and easy recipe is packed with vegetables including celery, carrots and onions for a tasty nutritious boost. It’s the perfect pick-me-up when your baby or older child is sick with a cough or cold. Suitable for the whole family, this is a classic comfort food that never gets old!


Cook time: 45 minutes
Makes: 4 Adult portions

Ingredients
2 chicken breasts
2 carrots, peeled and chopped
2 celery stalks, chopped
2 small onions, diced
1 litre low sodium chicken stock (2 stock cubes)
½ tsp. freshly ground black pepper
1tsp. fresh or dried parsley
1tsp. fresh or dried thyme

Method

  1. Place a large pot over medium heat. Add all ingredients and bring to the boil.
  2. Reduce heat, cover and simmer for 30-40 minutes.
  3. When the chicken is cooked through and the vegetables are soft when pierced with a fork, transfer to a food processor and purée until smooth.
  4. Serve warm and top with a sprinkle of fresh black pepper to taste.

Weaning
6-7 months - Smooth and slightly thicker soup, no lumps.
7-8 months - Thicker puree with increased texture.
8-9 months - Minced and mashed with soft lumps.
9-12 months – Minced and finely chopped.
