This nutty oat bread is an excellent high fibre snack. It can be used as a snack between main meals with some nut butter or regular butter and a cup of tea. It’s also an excellent option for lunch with some soup.
Great for:
· Healthy snack
· Adding fibre to your diet
· Slow releasing energy
Ingredients
· 400g natural yogurt
· 150g of porridge oats
· 2 eggs
· 1 Tbsp. olive oil
· 2 tsp of bicarbonate of soda
· 1/2 tsp salt
· 4 Tbsp. of mixed nuts / seeds: Chia seeds, pumpkin seeds, walnuts and chopped almonds
· You can also add cinnamon and 1 Tbsp. honey for a little sweetness
Directions
1. Pre heat your oven to 180°C
2. Grease a loaf tin or line with parchment paper
3. In a bowl mix yogurt, olive oil, eggs and bicarbonate of soda
4. Add in the oats, nuts and seeds and mix well
5. Add in the bread mixture to your baking tin
6. Place the bread in a pre-heated oven and bake for 50 minutes or until the centre is properly cooked through
