Tiger Prawn & Chilli Pasta with garlic bread
(serves 6-8 people)
ingredients:
900g Tiger Prawns (deshelled)
500g Conchigilie Pasta
50ml Rapeseed Oil
8 cloves Garlic (Chopped)
1 medium Onion (Finely Chopped)
2 Chilli
2 Limes (Zested & squeezed)
200g Parmesan cheese
25ml Soy sauce
400ml Cream
50g Chives
50g Flat leaf parsely chopped
Salt & Pepper
Parmesan cheese to serve
method:
1. Cook the pasta in salted water until just cooked and al dente
2. Saute onion, garlic & chilli in oil
3. Add prawns and cook until just pink
4. Add cream and soy sauce, reduce
5. When reduced by half, add the chives and parsley.
6. Add parmesan and lime zest and stir through, season
7. Divide into bowls evenly & squeeze some of the lime over each serving
8. Serve with garlic bread and extra parmesan cheese
