Serves: 2
Ingredients:
· 2 or 4 fillets of fish (Cod or Hake)
Marinade:
· Salt
· 2 tbsp of semolina
· 2 cloves of garlic (finely chopped)
· 1 tsp fresh ginger (finely chopped)
· 1 tsp yellow mustard paste
· 1 knob of butter
· ¼ lemon juice
· ½ tsp of chili powder/ paprika
· Black pepper
Vegetables:
· 2 medium potatoes
· Red, yellow & green pepper
· 1 medium red onion
· 7-7 button mushrooms
· 3-4 florets of broccoli
· 6—8 cherry tomatoes
· Fresh coriander
· 3 tbsp olive oil
· 2 tbsp grated parmesan
Method:
1. Preheat the oven to 240 °C.
2. Marinade the fish in an oven proof dish. Add in 2 tbsp of semolina, 2 cloves of garlic (finely chopped), 1 tsp fresh ginger (finely chopped), 1 tsp yellow mustard paste, 1 knob of butter, ¼ of a lemon (juice), ½ tsp of chili powder/ paprika and black pepper.
3. Add in peppers, red onion, sliced mushrooms, sliced florets of broccoli, cherry tomatoes, coriander, 2 potatoes thinly sliced round potatoes on top of the fish. Drizzle with olive oil and parmesan.
4. Bake for 20 mins and serve hot.
