Lamb Cutlets with green beans, griddled peppers and basil dressing

(Serves 4)

 

Ingredients:

8 well trimmed Lamb cutlets

A large handful of green beans

1 red pepper, sliced into thick (2cm) pieces

Some fresh basil leaves

1 clove garlic, minced.

A spritz of lemon juice

Olive oil

Salt & pepper

 

Method:

1.  Brush some oil on to the lamb cutlets and season with salt & pepper

2.  Heat a griddle pan until smoking and place the lamb on.

3.  Cook each side for about 2 minutes. Rest on a warm plate.

4.  Add the green beans and peppers to the griddle and reduce the heat.

5.  Add a little oil if the pan is drying out and a spritz of lemon juice.

6.  In the meantime, put the basil and garlic in a small bowl and drizzle a little olive oil in.

7.  Add a little lemon juice, salt & pepper and taste to check seasoning.

8.  Serve the lamb cutlets on top of the veg and drizzle with the basil dressing.
