Ingredients:
150g Cooked Beef (a fillet steak is perfect)
A large handful of rocket leaves
A squeeze of Lemon Juice
For the batter:
250ml milk
115g plain flour
1 pinch salt
2 eggs
A good glug of Rapeseed or Sunflower Oil
Method:
1. Mix all the ingredients for the batter thoroughly but try not to over mix. Leave to rest for at least half an hour.
2. In the meantime, preheat the oven to 200˚C Fan, 220˚C, or Gas Mark 6
3. Place a teaspoon of oil in each well of the mini muffin tray and heat in the until very hot.
4. Carefully pour the batter into each well and cook for about 15 mins or until golden brown and risen up.
5. Slice the beef thinly and lay on top of each Yorkshire pudding. Top with the rocket and a squeeze of lemon juice.
