Gluten Free Belgian Chocolate Brownie

Ingredients:

340g Dark chocolate

190g Butter

260g  Caster Sugar

2 tablespoons of Vanilla Essence

9 Eggs, separated

150g Ground Almonds

 

Method:

1.  Pre heat oven 180c / 360 f / gas 5

2.  Melt dark chocolate and butter together in a bowl over a saucepan of warm water

3.  Mix sugar, egg yolks, ground almonds and vanilla essence in a separate bowl until combined

4.  Add in melted chocolate mixture

5.  Once all combined, whisk egg whites till stiff peaks are achieved and fold gently into chocolate mix

6.  Pour mix into a baking tin and place in preheated oven for 25 mins

7.  Take Brownie out of oven and leave to cool for 20 mins before serving to let Brownie stand

8.  Serve with clotted cream and fresh raspberries
