Strawberry, pistachio, Feta and chicken salad with Orange Poppy Seed Dressing
Serves 4
Ingredients:
150g rocket
150g strawberries, hulled and sliced
60g Feta
60g pistachios, roughly chopped
100g cooked chicken breast, torn
For the dressing:
60ml olive oil
1 tbsp lemon juice
1 tbsp orange juice
2 tsp Dijon mustard
1 tbsp honey
2 tsp poppy seeds
Salt and black pepper
Preparation
1 Add all of the dressing ingredients to a screw-top jar. Seal the lid and shake well until combined.
2 Layer the rocket, strawberries, Feta, pistachios and chicken in a large lunchbox.
3 Drizzle over enough of the dressing to coat, then close the lunchbox and shake to combine. Open the lunchbox and dig in.

Strawberry Smoothie
Serves 2
Ingredients
6 strawberries
16 raspberries
12 blueberries
40g porridge oats (optional)
100ml low-fat natural yoghurt
50ml apple juice
Preparation
Rinse the strawberries, raspberries and blueberries with water
Blend all fruit in a food processor with the yoghurt and apple juice
Add in the porridge (optional) and blend again until thick, creamy and smooth
Serving Suggestions
Pour the smoothie into two glasses, decorate with a sliced strawberry, add a paper straw and enjoy!
Tip
Freeze your own fresh, best in season berries before blitzing for a refreshingly sweet take on this classic recipe!
