Ingredients:
100g Strawberries, quartered
Honeycomb Ice-cream
1 Mango, diced
70g Brown Sugar
1pint Whipped Cream
2/3 Chocolate Flakes
100ml Balsamic vinegar
For the Lemon Curd:
1 Egg yolk
4 Lemons, juice and zest
200g Sugar
100g Unsalted Butter
3 Eggs
Method:
1. Place Strawberries into a bowl with brown sugar and balsamic, mix with a spoon and leave for 30 mins in fridge
2. Place Lemon juice and zest and sugar into a bowl. Sit bowl over a pot of gently boiling water until melted
3. Lightly whisk eggs and egg yolk and stir them into melted lemon mixture. Mix until all ingredients are well combined and then leave to cook for 10 mins stirring every now and then until mix is creamy and thick enough to coat the back of a spoon
4. Remove from heat and leave to cool
5. Place a spoon of strawberries in bottom of knickerbocker glass and add half diced mango on top of the strawberries.
6. Add two scoops of honeycomb ice cream, top with more strawberries and mango and then drizzle some lemon curd over the top of mango.
7. Finish with fresh cream and chocolate flakes
