(Quantities below make 8 burgers )
Into a food processor add:
1 tin of drained black beans
1/2 packet of smoked tofu or any firm tofu of choice
250g of cooked chestnuts or chestnut purée
1 chopped red onion.
Blitz to a burger type consistency
Season mix with the following:
Salt/pep
Garlic powder
Rosemary
Thyme
Parsley
Ground cinnamon
Squeeze of ketchup
Spoon of whole grain mustard
Porcini dust and chilli flakes as additional extras for a boost
Finally to help bind add:
Panko flakes
Pumpkin seeds
Shape into burgers and onto a baking tray
Ideally pop them in the fridge for an hour or two
Into the oven at 200c for 35 min and Voila!
Mulled wine cranberry and date sauce-
In a pan heat the following:
120g sugar, 100ml of orange juice, a tsp of ground cinnamon, clove and ginger.
When it begins to bubble add approx 350g of fresh cranberries and about 10 finely chopped pitted dates
Bring to the boil reduce to simmer and let it do its thing!
I always add a pinch of salt and pep and a teeny tiny bit of hot sauce
De glaze the pan with a nice splash of dry red wine or port.
Remove from the heat when the mix becomes gooey and jam like
Delicious!
Adjust seasoning to your liking
My mums potato stuffing:
Peel and chop potatoes
Pop into a saucepan with water
Bring to the boil, reduce to a simmer and leave to cook through
Drain and get mashing with almond milk or tinned coconut milk and oodles of vegan spread
Season with salt, pep, thyme and parsley
Add some finely chopped shallots
Using an ice cream scoop divide into rounds on an oil baking tray and press down to flatten into patties.
20 min at 180c.
You can also just bake all this mix in a tray and have as a sharing dish of stuffing I just adapted this for the burger.
Brussel sprout hazelnut mix-
Top and tail b sprouts
Finely grate or blitz in a food processor
Sauté in a pan with a splash of tinned coconut milk, garlic powder, finely
chopped hazlenuts, salt/pep and a little ginger ale! Optional but the sugar and ginger kick are amazing with the sprouts

Local leaves and bread rolls
