Baked Spiced Plums with Ricotta Hot Cakes

Baked Spiced Plums

 

6 plums ( halved and remove the stone)

1 tbsp of castor sugar

1 tsp cinnamon

1/4 tsp of mixed spice

a few star anise maybe 4/5

A knob of butter

and little drop of water if you want extra sticky spicey plums

 

METHOD

Pop your halved and stoned plums into a butterd dish and sprinkle your spiced sugar mix over the plums ( thats your sugar , cinnamon, mixed spice and  star anise) pop in a knob of butter ,as i like butter,  add a little water if you wish and pop into the oven at 180 or gas mark 4 for about 2530 mins , (i coat the plums with the sticky spicey caramel half way through , but thats me ) Then they are ready and serve with what ever you want ........

 

Ricotta hot cakes

 

250 grams ricotta cheese (the cows milk one i find the best)

125 ml of milk

2 large eggs (separated)

100 grams plain flour

1 tsp baking powder

pinch of salt

oil for the pan

 

METHOD

Put the ricotta, milk and egg yolks into a bowl and mix well Stir in the flour, baking powder and salt and whisk to make a smooth batter Beat the egg whites until they become fluffy and then fold them into the ricotta mixture Heat the oil in a large frying pan and drop in heaped dessertspoons ( for the firefighters i had to use a way bigger spoon of batter, they are big beasts to keep fed) Cook the pancakes for about 1 minute until golden and then flip them over and cook for another minute Keep the cooked pancakes warm and then serve them with your baked spiced plums, job done ....
