Mixologist Darren Geraghty, from the Candlelight bar in Dundrum, had some great recipes for summer cocktails.
1. Red snapper (Gin Bloody Mary)
Ingredients
60ml opihr spiced gin
150ml tomato juice
6 dashes tabasco
4 dashes Worcestershire sauce
15ml lemon juice
1/3 tsp creole seasoning mix*
Method
And all ingredients with ice and stir or throw(ref darren) till mixed and chilled Garnish with celery
2. BBQ Brew
Ingredients
50ml Bumbu spiced rum
60ml pineapple juice
20ml lime juice
20ml chilli sugar syrup
100ml wheat beer
Method
Add all ingredients to shaker and hard shake and strain into glass Garnish with pineapple
3. Summer Strawberry Slush
Ingredients
5 fresh strawberries
20ml lime juice
30ml agave syrup
20ml orange juice
Pinch sea salt
Method
Garnish with strawberry and serve in black pepper rimmed glass
