(Serves 4)
Ingredients:
Oil
600g Beef Medallion (ask your butcher to prepare)
Sea Salt and Pepper
½ red Onion Sliced
1 clove of Garlic Chopped
2tblsp of brandy
100g Full Fat Irish Cream
50g of Irish Blue Cheese
1tsp of Dijon Mustard
Knob of butter
Some sauté new Potatoes and Greens to serve
Method:
Heat Pan, add 1tsp of oil, place medallions on pan, season with salt and pepper, cook either side for 30-40 seconds, remove from pan and set aside
Re-heat Pan, add onion and garlic, cook until nice and soft, add brandy and flame
Add cream, bring to boil, add in cheese and mustard, reduce, finish with a knob of butter
Add back in medallions, juice and all and heat through
Serve with some nice sauté new potatoes and greens, yummy
