Italian Sunshine Jar:
Start with 2 tablespoons of salad dressing of your choice. Layer in strips of courgette, cherry tomato halves, chunks of cucumbers, small cubes of feta cheese, sliced black olives, fresh oregano, mixed lettuce leaves and toasted pine nuts.
Chilli Lime Dressing
• 2 tablespoons extra virgin olive oil
• 2 tablespoons fresh lime juice
• 1 teaspoon dried ground cumin
• Pinch chilli flakes
• Pinch of salt and pepper
Combine all ingredients in a jar with an air tight lid. Close and shake until blended.
Chocolate Ice Cream!
This is actually a healthy low calorie ice-cream but tastes amazing! Do ensure to keep to chocolate soya milk portion of 60mls at a time, so this recipe is fine if you stick to a portion!
Preparation time: 10 minutes Cooking time: 3+ hours in freezer Serves: 4
INGREDIENTS
200g/ 2 frozen bananas
50g peanut butter
125ml chocolate soya milk
30g/1 tbs dark chocolate chips
0.5g/ mint leaves to garnish
WHAT TO DO
1. Blend all ingredients except the chocolate chips and mint leaves.
2. Sprinkle with chocolate chips before placing in lidded container in freezer for at least 60 minutes
3. Serve with fresh mint leaves
