If you are looking for a family friendly dish that's quick and easy to make then look no further than Edward's One Pot Piri Piri Chicken!
Servings: 4
Preparation time: 10 minutes
Cooking time: 10-15 minutes
Ingredients
450g chicken mini fillets
2 tbsp vegetable oil
1 sachet Knorr Pan Cook Piri Piri Seasoning Mix
100g chorizo sausage, sliced
2 x 250g sachets microwaveable rice
400g can kidney beans, drained
340g can sweetcorn, drained
Handful fresh coriander, chopped
Method
1. In a bowl mix the chicken with the oil, add the Knorr seasoning mix and stir well to coat.
2. Over a medium heat pan-fry the chicken and chorizo together in a large nonstick frying pan, turning occasionally until golden brown for approximately 8-10 minutes, until the chicken is cooked.
3. Add the rice, kidney beans and sweetcorn and heat thoroughly.
4. Serve immediately garnished with coriander.
