Cauliflower Buffalo Wings
Ingredients:
1 head of cauliflower
For the marinade:
• 1 teaspoon smoked paprika
• 1 teaspoon garlic powder
• 1/4 teaspoon chilli powder
• 1 tablespoon tomato purée
• 2 tablespoons tamari/soy sauce
• 1 tablespoon cider vinegar
• 4 tablespoons oil
• 2 tablespoons water
• 1 tablespoon of liquid sweetener (honey/maple/agave syrup)
Method:
1. Preheat oven to 180 degrees.
2. Chop the cauliflower and add to a baking tray.
3. Add all the marinade ingredients to a bowl and mix together into a paste.
4. Cover the cauliflower in the marinade - making sure you cover well.
5. Bake in the oven until lightly browned for 20 - 25 minutes.
Halloumi and Grilled Veg Sandwiches/sliders, with homemade sweet chilli ketchup and dairy free mayonnaise
Ingredients:
2 x courgettes
2 x aubergines
2 x red peppers
2 x yellow peppers
1 block of Halloumi
1 bag of rocket
4 x burger buns/ciabattas
Oil
Salt & pepper
For the sweet chilli ketchup:
1 x chilli
200g tomato puree
100g honey
60ml apple cider vinegar
6 tablespoons of water
Alternatively, you can use Sundried Tomato Pesto
For the mayonnaise:
2 cloves of garlic
4 tablespoons of tahini
Juice of half a lime
½ tablespoon of honey
5 tablespoons of water
Method:
1. Prepare and slice your veg.
2. Cover with a little oil, season with salt and pepper and grill.
3. Slice the block of halloumi lengthways, season and grill.
4. Add all the ingredients for the sweet chilli ketchup to a bowl and mix together.
5. Similarly, add all the ingredients for the mayonnaise to another bowl and mix together.
6. Toast your buns.
7. Assemble your sandwich and enjoy!
8. To make homemade sliders simply put a cocktail stick into each quarter of your sandwich and cut in four (e.g. four homemade sliders!).
