Edward Hayden was in the kitchen with this delicious recipe for homemade chicken and veg nuggets.
Ingredients:
• 500g Chicken Breast, diced
• ½ an onion chopped
• ½ a courgette chopped
• ½ a large carrot chopped
• ½ a celery stalk chopped
• 1 teaspoon of garlic powder
• A pinch of White Pepper & Salt
• 1 Egg White
For Coating:
• 1 cup of corn flakes crushed (you may also use breadcrumbs)
• ½ teaspoon of garlic powder
• A pinch of white pepper & salt
Instructions:
1. Put the diced chicken in a food processor with garlic powder, egg white, salt and white pepper. Mix until they form a paste and put into a bowl.
2. Put all the vegetables into the food processor and blend until they are finely chopped.
3. Combine the chicken paste with the finely chopped vegetables.
4. Using 1 tablespoon of the paste, form the shape of a chicken nugget and coat with the crushed cornflakes mix.
5. Place on a wire rack, on a baking tray lined with tin foil and bake in a pre-heated oven for 20-30 minutes at 230C/Gas 8.
