This dish is simple to make and full of flavour. Its low in carbohydrate but still really tasty and filling. The great thing about this dish is that there is very little preparation involved and you don’t need to be a chef to make it!
Great for:
· A quick and healthy dinner
· Getting veggies into your diet
· Low carbohydrate dinner or lunch
Ingredients
2 Tbsp. olive oil
600g skinless chicken breasts, diced into pieces
2 handfuls of fresh spinach
2 onions, chopped
1 clove garlic, minced
1/3 courgette, chopped
4 Tbsp. Greek yogurt
50g Parmesan cheese
75g mozzarella cheese, shredded
2 Tbsp. chopped pecans
2 Tbsp. sesame seeds
Salt to taste
Directions
Preheat your oven to 190 degrees then coat a 9" x 13" baking dish with a little olive oil.
Place chicken into baking dish and add olive oil and salt to the chicken and then bake for 15 minutes. You can add other spices here if you like.
Coarsely shop the vegetables then add to a medium bowl.
Add all the remaining ingredients to the bowl (including the yogurt) and stir to combine then pour over the chicken and spread out.
Bake for 15 minutes then remove and add the cheese, sesame seeds and chopped pecan nuts on top.
Place the dish back in the oven and bake for another 10 minutes.
