TV3’s ‘The Lazy Chef’ continues to rustle up gourmet meals made easy.
In this brand new six-part cookery series for TV3, Lazy Chef Simon Lamont travels all over Ireland to sample the spoils of Irish cuisine and rustle up some quick fix dishes.
The mix of flat terrain, rolling mountains and rugged coastline of Mayo offer up the perfect conditions for some of the ingredients featured in this second episode, including fish and mountain lamb.

TV3’s brand new cookery show with a difference, sees Lazy Chef Simon Lamont travel all over Ireland, cooking exquisite meals that are quick and easy to rustle up, and this week Simon is heading to Mayo. Unlike most cookery shows, The Lazy Chef will cut every corner to make effortless food, all the while showcasing some of the best produce on offer across the country. This unique programme will see Simon share his secrets to fast track delicious meals by offering tips, tricks and short cuts that will allow you to make complicated food in a simple way.
Simon’s quest for big flavours sees him meeting some big characters, all as passionate about food as himself. Over the course of the series, he will travel the length and breadth of this beautiful island to sample the spoils of Irish cuisine, interacting with those who are dedicated to providing the very best locally made produce.
The Lazy Chef’s next stop is the picturesque county of Mayo. The mix of flat terrain, rolling mountains and rugged coastline offer up the perfect conditions for some of the ingredients featured in this second episode, including fish and mountain lamb. Simon gets straight to work for his dinner as he fishes in the Atlantic Ocean, catching some wonderful mackerel and pollock. He rustles up a quick lunch of mackerel on the cliffs of Clare Island. Then it’s straight to the kitchen to prepare his effortless Sticky Fish Noodles that will satisfy any busy family.
Simon tries to herd some of the famous Achill Mountain Lamb before foraging in the grounds of Westport House. After finding some of the wonderful herbs on offer on the grounds, Simon heads back to the kitchen to cook his easy Low and Slow Roast Lamb.

About Simon Lamont:
Presenter, The Lazy Chef, TV3
The Lazy Chef Simon Lamont was born and bred in Dublin. He studied Culinary Arts in DIT's Cathal Brugha Street. Simon majored in pastry work and graduated with honours. He had a dozen chef and waiter stints during his college days, culminating in a job at the Michelin rated Auberge de la Truffe in the South West of France. Simon worked in some of the best restaurants in the world and learnt the techniques of the Braai (African Barbecue) in Cape Town. He also worked with the famous Wright Brothers Oyster House in London, a restaurant recently voted in the top 5 of London’s seafood establishments by Zagat.
