Irish Langoustine & Smoked Salmon Cocktail , an ideal starter.
Ingredients (Serves Four)
2 slices of smoked salmon, cut into thin strips
1 kg of fresh Langoustine
1 tsp. of tabasco
1 tsp. of Worcestershire sauce
1 tbsp. of horseradish
1 tsp. of brandy
2 tbsp. of tomato ketchup
2 heads of baby gem lettuce, washed and roughly sliced
2 tbsp. of paprika
2 gherkins, finely diced
1 lemon, cut into wedges
5 tbsp. mayonnaise, you can use an off the shelf brand or the homemade version if you have time otherwise, see below.
Homemade Mayo Ingredients
1 tbsp. of white wine vinegar
2 egg yolks
250ml of vegetable oil
2 tsp. of Dijon mustard
Method
Bring a large pot of salted water to the boil and cook the langoustines and juice of ½ lemon for 2-3 mins. Strain and leave to one side to cool before peeling the prawns. Put the mayonnaise in a bowl and stir in the ketchup, Worcestershire, tabasco, horseradish, and brandy, seasoning to taste.
To serve
In a cocktail glass put a tsp. of sauce in the base then the lettuce, smoked salmon and langoustines. Spoon the cocktail sauce over the top and garnish with the diced gherkins, a pinch of paprika and a wedge of lemon.
Homemade Mayo Method
Simply add the vinegar into a clean bowl and whisk in the egg yolks. Next add the mustard and slowly whisk in the vegetable oil, starting with a few drops then adding a spoonful at time until the mayonnaise has emulsified and thickened.
