Chef Joe Shannon has the recipe for success when it comes to preparing a delicious 3 course Valentines Dinner.
For Starter: 2oz baby green beans, blanched in salted water 2oz greens, Roquet or Mizuanna, etc, Mixed, up to you 1 oz roasted red onions, julienned Sea Salt / Cracked black pepper 2 figs, cut in wedges ½ oz Flaked Almonds, toasted 4 oz of Cream Irish Cheese Vinaigrette 2 Passion Fruit Seeds 1oz Finly Chopped Shallots Sea Salt/ Cracked Black Pepper 1 fl oz Walnut Oil 2 Fl oz extra virgin olive oil Pinch of Brown Sugar For Main Course: 2 Female Duck Breasts Trimmed and Scored Olive Oil Sea Salt / Cracked Black Pepper Red Cabbage: ½ head of shredded Red Cabbage ½ Chopped Apple 2 oz Raisins 1 Rind and Juice of Orange 1 Cinnamon Stick 2 fl oz of Red Wine 2 fl oz Red Wine Vinegar 2 oz Brown Sugar Sea Salt / Cracked Black Pepper Sauce 2 oz Brown Sugar 2 FL oz of Vinegar 1 Orange Juice and Rind Splash of Port 4 fl oz of Jus For Dessert: 8 oz of Dark Chocolate 70% plus Coco 1 Splash of Irish Crème Liquor 8 oz White Chocolate 70% plus 1 Splash of Coffee Liquor Assortment of Fruits: Strawberry, Melon, Grapes Etc Marshmallow
For Starter: For the saladToss the beans, greens and onions with the vinaigrette and correct the seasonings.Garnish with the figs, Almonds and cheese. For the vinaigretteAdd all the ingrediants together and whisk, check for seasoning and sweetness  For Main Course: For the Cabbage: mix all ingredients together, Transfer into a casserole dish, cover and braise for 2 hrs approx in oven 180c or until nice and soft (don't forget to remove cinnamon stick at the end of cookin, stir occasionally to distribute the flavoursDuck: Place prepared duck, skin side down onto a medium to hot non stick pan and cook for 1 min, turn and cook out for further 30 seconds, season, transfer onto a dish and place in oven at 180c for 68 mins or until medium cooked Sauce: Place sugar and vinegar into duck pan and boil until syrup, add orange juice and rind, add port and jus and reduce to desired consistency Assemble dish and serve For Dessert: Place dark chocolate and Irish Crème Liquor in a bowl and in a separate bowl place White Chocolate and coffee liquor.Place bowls over a pot each of simmering water (2 ban Maries) stir until melted.Place into a two nice serving bowls, onto a platter, with fruits and marshmallows assembled decoratively.
