TV chef Stuart O'Keeffe shows us how to make Grilled Peach Crostini - the perfect appetiser!
Ingredients
- 1 French baguette, sliced ½ inch slices
- 2 tablespoons olive oil
- 3 Peaches, cut into segments
- 8 tablespoons low fat cream cheese
- salt and pepper
- 5 basil leaves, thinly sliced
- honey for drizzling
- Optional: 6 slices Proscuitto
Method
- Preheat oven to 350oF/180oC
- Slice the baguette into ½ inch slices, place on a non stick tray, brush or drizzle with olive oil, sprinkle with some salt and pepper. Place in oven for 1012 minutes or until lightly toasted.
- Cut peaches into segments and grill on the barbeque or on a grill pan stove top, until you obtain grill marks on one side (both sides not necessary as peaches tend to get too soft).
- In a bowl, mix cream cheese with 1 teaspoon of pepper.
- Let crostinis cool from oven; spread cream cheese on all slices.
- Place one grilled peach segment on each.
- Thinly slice basil and sprinkle on top of each piece, drizzle with some honey.
- Place on a platter and serve to your guests.
- Optional variation: loosely tear up the proscuitto and put on top of crostinis.
