Grilled Peach Crostini

TV chef Stuart O'Keeffe shows us how to make Grilled Peach Crostini - the perfect appetiser!

Ingredients

  • 1 French baguette, sliced ½ inch slices
  • 2 tablespoons olive oil
  • 3 Peaches, cut into segments
  • 8 tablespoons low fat cream cheese
  • salt and pepper
  • 5 basil leaves, thinly sliced
  • honey for drizzling
  • Optional: 6 slices Proscuitto
Method

  1. Preheat oven to 350oF/180oC
  2. Slice the baguette into ½ inch slices, place on a non stick tray, brush or drizzle with olive oil, sprinkle with some salt and pepper. Place in oven for 1012 minutes or until lightly toasted.
  3. Cut peaches into segments and grill on the barbeque or on a grill pan stove top, until you obtain grill marks on one side (both sides not necessary as peaches tend to get too soft).
  4. In a bowl, mix cream cheese with 1 teaspoon of pepper.
  5. Let crostinis cool from oven; spread cream cheese on all slices.
  6. Place one grilled peach segment on each.
  7. Thinly slice basil and sprinkle on top of each piece, drizzle with some honey.
  8. Place on a platter and serve to your guests.
  9. Optional variation: loosely tear up the proscuitto and put on top of crostinis.
