Chef Joe Shannon makes dinner party ready Green Pea Soup with Vodka Crème Fraiche
Ingredients
- 8oz Frozen Peas
- ½ Sliced Onion
- 2 oz Fresh Mint Chopped
- 1 Potato Peeled
- 1 Pint of Stock
- 2 oz Crème Frais Laced with Vodka
- Juice of ½ a Lemon
Method
- Simply Sauté Onion in a pot without colour
- Add Peas, Stock and Potato (Dice them up small)
- Cook for 20 mins and add Fresh mint, cook for further 5 mins
- Pass through Liquidizer or Blender and then pass through a strainer
- Serve in a warm bowl with a teaspoon of Vodka Laced Crème Fraiche
