Ingredients

  • 160g beef fillet
    30g mange toute
    30g red onions
    30g courgettes
    fresh chilli
    garlic
    green peppercorns
    mirin
    Shioaxing
    Light soy sauce
    sugar
    Thai basil
    baby leaf
    Scallion
    micro coriander
    mint
    lime juice

Method

  1. Irish beef fillet woked with the vegetables in a sauce made from rice wine, mirin and soy sauce. Enriched with butter and served with a lime dressing and herb salad.
