Grilled pork with Chimmichurri

Chef Marcus O\'Laoire creates a delicious pork recipe ahead of the Rugby World Cup.

Ingredients

  •  

  • 1 butterflied pork chop/2 thin pork chops
    salt
    pepper


  • Chimmichurri:
    Garlic
    Salt
    pepper
    Oregano
    chili flakes
    Red wine vinegar
    Parsley
    olive oil

Method

  1. Season your pork and place on a grill/in a pan.

  3. Mince some garlic and add into a bowl with oregano, salt and chili flakes, add vinegar and let sit for about a minute, add oil and parsley.

  6. You should be left with a thick and chunky sauce full of flavour.


  7. Remove your pork from the grill and transfer into a chopping board, cut into strips and drizzle with chimmichurri, serve with crusty bread or salad.
