Food & Drink: Delicious Desserts

These days its all about enjoying your food but with a reasonable budget. So this morning Billy is going to make us some simple delicious desserts - using up to 7 ingredients and all for under 20 euro.

 

Warm Chocolate Souffle

Yield: 6 Servings Bittersweet chocolate  Butter
Egg yolks
Granulated sugar All-purpose flour Egg whites
180 g 300 g 6
125 g 125g

 

Melt the chocolate and butter in a bowl over a bain marie.
Combine the egg yolks and 60 g of the sugar and beat at speed until the yolks are pale and form a thick ribbon.

 

When the yolks are fully whipped, add the flour and beat at low speed Slowly pour the melted chocolate into the yolk mixture.

 

In a separate bowl, beat the egg whites at medium speed until soft peaks form.
Slowly add the remaining 65 g of sugar and beat at high speed until stiff peaks form. Gently fold the egg whites into the yolk mixture.

 

Pour into 6 buttered and sugared ramekins or souffle moulds and bake at (200-220°C) until done, approximately 7-9 minutes.



Chocolate and Orange Mousse

Ingredients:
Chocolate              150 grams
Semi whipped cream  400ml
Orange for garnish

 

Method: Melt the chocolate  over pot of warm water.
Fold in approx one third of cream then rest of cream
Garnish with orange fillets and orange jest.



Chocolate fondant with Orange Marmalade Sauce

Ingredients (Serves 4)
For the chocolate fondant 100g chocolate (at least 54%)  100g butter, 50g sugar 100g whole egg, 40g yolk of egg 20g flour

 

Method: For the fondant, melt the chocolate and butter, Add the sugar, whole eggs  and egg yolks slowly, then fold in the flour. Pipe or spoon the mix into 4 greased rings. Cook for 7-8 minutes at 180ºC and serve straight away.

 

Orange Marmalade Sauce

Dilute half a cup of orange chip marmalade with a little water or orange juice and heat and spoon around fondant.
